Release file generated in the Debian repositories have entries hardcoded (eg. Origin, Label)
Having a way to override these values would be a great plus as, unattended-upgrades (the auto-upgrade tool for Debian based system), relies on these information to select auto-upgradable packages.
Suggestion: how about setting properties deb.release.xxx in the parent folder where the Release file is generated?
